Rice Flour Raisin Cookies

Rice Flour Raisin Cookies

  • 1/2 Cup White Rice Flour
  • 1/2 Cup Brown Rice Flour
  • 1 1/2 tsp. Baking Powder
  • 1/2 tsp. Cinnamon
  • 1/4 Cup Raw Sugar
  • 1/2 Cup Raisins
  • 60 Grams Margarine
  • 3 Tbsp. Water

Preheat oven to 180 degrees F. Prepare a flat oven tray so it is non-stick. Place flours, baking powder, cinnamon and raw sugar in a mixing bowl. Chop raisins and add to the dry mixture. Stir margarine into dry mixture and add water. Mix until a “stiff” dough is made. Roll into balls and flatten with a fork. Bake for approximately 15 minutes or until golden brown. Makes about 12 cookies.

Note:
Anything with rice flour tends to crumble so try self-rising flour that will give a result similar to baking with regular flour.

Rice Flour Gingerbread Recipe

 Rice Flour Gingerbread Recipe

  • 2 Cups Rice Flour
  • 1 tsp. Baking Soda
  • 3/4 tsp. Ginger
  • 1/4 tsp. Cinnamon
  • 1/2 tsp. Salt
  • 3/4 Cup Quick Oatmeal
  • 1 Cup Molasses
  • 1 Cup Sour Milk or Buttermilk
  • 1/3 Cup Butter, Melted

Sift flour, soda, spices and salt together. Add the oatmeal and mix thoroughly. Continue to stir and add molasses, milk and butter. Pour the well-blended mixture into a greased pan. Bake at 350 degrees F. for about 30 minutes.

Notes:

Variation: To make this recipe gluten free, replace the oatmeal with poha (rice flakes or other GF flakes for making porridge).

Brown Rice & Almond Bread (Bread Maker Recipe)

Brown Rice & Almond Bread (Break Maker Recipe)

  • 2 1/3 Cup Whole Wheat Flour
  • 2/3 Cup Cooked Brown Rice; Room Temperature
  • 1/3 Cup Gluten Flour
  • 1/3 Cup Brown Rice Flour
  • 1/3 Cup Toasted, Chopped Almonds
  • 1 1/2 tsp. Sea Salt
  • 1 1/4 Cup Water
  • 2 Tbsp. Canola, Safflower or Sunflower Oil
  • 2 tsp. Honey
  • 1/2 tsp. Almond Extract
  • 4 tsp. Active Dry Yeast

Add all ingredients to your bread maker according to manufacturer’s instructions. Program the bread maker for the “Whole Wheat Cycle”. Turn out to wire rack to cool.

Banana Spice Muffins

Banana Spice Muffins

  • 2 Ripe Bananas, Mashed
  • 1/3 Cup Honey
  • 2/3 Cup Orange Juice
  • 3 Tbsp. Lemon Juice
  • 1/3 Cup Applesauce or Canola Oil
  • 2 Cups Whole Wheat Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 tsp. Powdered Allspice

Using electric mixer, beat moist ingredients. Add remaining ingredients and beat until smooth. Fill muffin tins, coated with cooking spray, 3/4 full. Bake at 350 degrees F. for 25 minutes.
